Las Chicas del Café is a family-owned coffee roastery based in St. Thomas, Ontario. It was founded in 2005 by sisters Maria and Valeria Fiallos-Soliman with a family history in coffee. Las Chicas, with a background of four generations of coffee cultivation in Nicaragua, brings together tradition, craftsmanship, and passion for the perfect roast.  

Each batch of Las Chicas coffee is carefully sourced from their family’s farm in Las Sabanas, and then hand-processed from cherry to packaging. Las Chicas coffee reflects a deep respect for quality, sustainability, and biodiversity, and honours the rich heritage of Nicaraguan coffee culture.
