Tell us about yourself?
Growing up, my best friend had first-generation Korean parents. I ate dinner at their house whenever I could because I just LOVED kimchi. When I was in my teens, Mrs. Lee finally agreed to show me the secret to making traditional Korean fermented vegetables. A few years after university and living in Asia, I returned to Canada to start my own company. After 15 years and multiple awards for agri-food innovation later, Green Table Foods manufactures a unique line of products available nationwide through our network of retail partners.
If you could go back in time a year or two, what piece of advice would you give yourself?
We make our own luck through careful preparation.

What is the inspiration behind your business?
Through fermentation, we are able to extend the life of vegetables from weeks to years while at the same time increasing their nutrient density and flavour.
What is your magic sauce?
We use farm-direct, certified organic ingredients fermented in small batches with high-quality Himalayan pink salt.
What is the plan for the next 5 years? What do you want to achieve?
To provide customer direct sales through our website, with the option for product customization according to individual preference.
What is the biggest challenge you’ve faced so far?
The pandemic taught us that people are a company’s most valuable resource and that we are all in this together!
